Harvest: 9/27/23 - 4.8 tons, 17.5 brix, 113.3 g/l TA, 3.09 pH
Treatment: Destemmed and pressed. One load of grapes was cold soaked overnight. Fermentation lasted 26 days at 57-59 degrees in stainless steel tanks. The wine was cold and heat stabilized and then filtered. June 2024 bottling.
