Harvest: October 17, 2022, 2.9 tons, 19 brix, 9.1 g/l TA, 3.23 pH
Treatment: Destemmed, crushed, 7-day fermentation at 62-80 degrees. 100% malolactic fermentation. Transferred to oak on January 9, 2022.
Current stats: 6.3 g/l TA, 3.68 pH, 0.18 % residual sugar,12.5 % alcohol.140 cases.
