Treatment: Destemmed, crushed, 8 day fermentation at 66-80 degrees. 100% malolactic fermentation. Transferred to oak on March 17, 2022.
Current stats: 6.7 g/l TA, 3.49 pH, 0.2% residual sugar, 11.9% alcohol. 365 cases.
Tasting notes from John: Bright, round. Blueberry, mint, chalky tannins. Aromatically tight right now, but a lot to offer with time. Elegant and delicious.
