Harvest: November 1, 2021, 8.58 tons, 19 brix, 7.1 g/l TA, 3.20 pH
Treatment: Destemmed, crushed, 9 day fermentation at 66-78 degrees. 100% malolactic fermentation. Transferred to oak on January 12, 2022. Current stats: 5.7 g/l TA, 3.57 pH, 0.4% residual sugar, 12.3% alcohol. 420 cases.
