A total of 3 tons of estate grown Cabernet Franc grapes were harvested for this wine on November 3rd, 2020, with 22.5 brix of natural sugar, 0.61 g/L TA and a 3.30 pH. Crushed, cold soaked, pressed, and inoculated with yeast, the wine went through a 20 day fermentation at 59-60 degrees. Then heat and cold stabilized and filtered, the wine was aged in stainless steel tanks until bottled on May 6th, 2021. 13.7% alcohol, 0.63 g/L TA, 3.34 pH and a residual sugar of 0.4%. 178 cases were produced.
