Harvest: September 26, 2023, 0.79 tons, 18 brix, 11.6 g/l TA, 3.20 pH
Treatment: De-stemmed, crushed, 8-day fermentation at 64-79 degrees. 100% malolactic fermentation. Transferred to French oak on November 15, 2023.
Current stats: 6.0 g/l TA, 3.80 pH, 0.4% residual sugar, 12.4% alcohol. Approximately 42 cases. Est. bottling 2025
Tasting notes from John: Garnet red, bright red berries character. Strawberry, cherry, hint of vanilla. Textured and alluring. Wish there was more of it!
