Harvest: October 1, 2023, 2 tons, 20 brix, 7.3 g/l TA, 3.29 pH
Treatment: De-stemmed, crushed, 11-day fermentation at 61-79 degrees. 100% malolactic fermentation. Transferred to oak on January 3, 2024.
Current stats: 6.9 g/l TA, 3.59 pH, 0.6% residual sugar, 12.5% alcohol. Approximately 143 cases. Est. bottling 2025
Tasting notes from John: Brambles, blueberry, plum. Nice acidity,soft, round, and chalky. Young but delicious!
