Treatment: De-stemmed, crushed, 8-day fermentation at 65-79 degrees. 100% malolactic fermentation. Transferred to oak on December 23, 2023.
Current stats: 6.3 g/l TA, 3.73 pH, 0.4% residual sugar, 12.4% alcohol. Approximately 143 cases. Est. bottling 2025
Tasting notes from John: Dark fruits- blackberry, black cherry, etc., spring flowers, graphite. Lingering and smooth. Exemplary, despite such a difficult season.
